52 Weeks of Smoothies: The Elvis

This week's smoothie was inspired by Elvis's favorite food: peanut butter + banana + honey! I love this combo (it makes such a tasty sandwich!) and thought it would be fun to try it as a smoothie. I'm now convinced that peanut butter makes everything better, and honey is my new favorite natural sweetener. I like to try to squeeze in veggies wherever I can, so I added kale to the mix as well. Don't be fooled by it's green color though...this is definitely a sweet dessert smoothie. It's so good!
The Elvis smoothie, serves 1
1 banana, sliced and frozen
1 cup freshly washed kale
1 Tbsp peanut butter
1 Tbsp honey
1 Tbsp raw slivered almonds
2 Tbsp flax and chia seeds (optional)
1 cup cold spring water
1-2 squirts liquid stevia (optional, to taste)

I'm so happy that the weather here has been warming up a bit. I'm looking forward to testing out my new running shoes. What are some of your favorite ways to exercise? I love playing volleyball and jogging at the park, and I'm looking for some new activities to try out. Let me know your favorites! xo, Mandy

My fave way to exercise is to lift weights! Honestly you get amazing results - way more effective than cardio in terms of transforming your body. Good luck and I look forward to reading more about your healthy lifestyle initiative!
